La Cavalerie, the estate of Emanuel Ungaro at the foot of the Luberon, is a former Templar commandery from the 12th century. For over twenty years, olive trees of the Aglandau, Bouteillan, and Cayon varieties have been cultivated on this estate, producing high-quality green fruity olive oil.
